For Adria Moss, food is memory. A simmering pot of soup reminds her of childhood snow days. A baked sweet potato takes her back to her college apartment, huddled up in a blanket. So when her doctor recommended a lower-fat diet for heart health, Adria worried about what she’d have to give up.
“I thought, ‘There go my cozy meals,’” she says.
But instead of grieving the change, she took it as a creative challenge. Could comfort and health exist in the same bowl?
Turns out, yes.
She started swapping heavy creams for pureed white beans in soups. She learned how roasting could bring out sweetness in vegetables. And she fell in love with spices again—warming turmeric, cumin, paprika, and garlic—all adding depth without fat.
“My meals didn’t get smaller, they got smarter,” Adria shares. One cold evening, she recreated her favorite chili with lentils and crushed tomatoes. It was so satisfying, she forgot it was “low-fat” at all.
Now, Adria’s kitchen smells just as comforting as before—but with lighter ingredients that still feel indulgent. “It’s not about cutting flavor,” she says. “It’s about finding new ways to bring it back.”
