Joelle Sparks’ Dairy-Free Meal Plan for Family Dinners

Joelle Sparks didn’t set out to go dairy-free—she simply wanted dinners without drama. One favorite is her creamy coconut chickpea curry served over jasmine rice, with a squeeze of lime and fresh cilantro. Another is roasted cauliflower tacos with avocado-lime sauce and pickled onions. “When meals are bold and satisfying, no one asks what’s missing.”

The shift had an unexpected bonus: everyone in the family started feeling better. Her husband’s heartburn vanished. Her kids had fewer stomachaches. “We didn’t realize dairy was affecting all of us differently,” Joelle says.

Even classic comfort dishes found new life—she makes mac and “cheese” with butternut squash and cashew cream, and mashed potatoes with olive oil and roasted garlic instead of butter. “It’s not just about taking dairy out—it’s about putting love in,” she jokes.

Today, Joelle’s kitchen is filled with experimentation. She’s not militant about being 100% dairy-free but has found that avoiding it most days works best for everyone. “It’s about what makes your family thrive.”
