Yasmin Starr’s Vegan High-Fiber Plan to Improve Energy

Yasmin Starr was always health-conscious, but even after going vegan, she still found herself dragging through most of the day. “I thought cutting out meat and dairy was enough,” she explains. “But I was still constantly tired, even with eight hours of sleep.”

It wasn’t until a nutritionist pointed out a major gap in her diet—fiber—that Yasmin began to rethink her meals. “I was eating vegan junk food without realizing it,” she laughs. “Lots of white bread, vegan cheese, frozen mock meats… but barely any real plants.”

Once she focused on getting more fiber, her energy began to shift dramatically. Instead of relying on caffeine to power through her afternoons, she filled her plate with lentils, black beans, leafy greens, oats, and chia seeds. The results, she says, were almost immediate.

“In less than a week, I felt lighter, more awake, and strangely, happier,” Yasmin recalls. “There’s this mental clarity that comes with eating high-fiber foods. I wasn’t bloated anymore, and my mood swings stopped.”

One of her staples now is a fiber-packed smoothie made with spinach, frozen berries, flaxseeds, and oat milk. She also makes a lentil and quinoa bowl with roasted veggies for lunch and finishes her day with a warm bowl of steel-cut oats topped with almond butter and banana. “Simple, satisfying, and I never feel like I’m crashing.”

Yasmin says the key isn’t just loading up on fiber randomly—it’s about combining it with healthy fats and plant proteins to stay full and balanced. “You can’t just eat a bunch of apples and expect miracles. It’s about building real meals.”

Her energy improved so much that she was able to get back into a consistent yoga practice, wake up earlier without an alarm, and even launch a side business she’d been putting off for years. “I had all these ideas, but no energy to act on them. Now, I’m creating again.”

Today, Yasmin shares her journey on social media, emphasizing that going vegan isn’t automatically healthy—and that fiber is the quiet hero of plant-based living. “It’s not glamorous,” she says, “but it’s the reason I feel like myself again.”

Her advice to others feeling run-down? “Don’t just ask what you’re avoiding—ask what you’re missing. For me, fiber made all the difference.”
