Jessa Vale’s Vegan Breakfasts that Fuel Your Morning

Before, Jessa Vale was the type of person who would grab a coffee and call it a day, or skip breakfast.

However, after adopting a plant-based diet, she became aware of the impact that a healthy breakfast could have. By 10 a.m., she claims, “I was always running on fumes.”

Jessa struggled at first. The majority of her favourite breakfast foods were no longer acceptable, including buttered toast, yoghurt, and eggs. Instead of focusing on what she had to give up, she treated breakfast as an experiment.


She began with overnight oats and then experimented with nut butter smoothies, tofu scrambles, and warm quinoa bowls. She gradually discovered meals that were truly energising in addition to being satisfying.


She says, “I realised that eating balanced was more important than just being vegan.” In order to keep her full and focused, she now begins her mornings with fibre, protein, and healthy fats. She has also completely changed her relationship with breakfast.


She laughs as she remarks, “I now look forward to mornings.” It’s not about going with the flow. The goal is to feel good before the day even starts.
