Zara Frost’s Low-Carb Mediterranean Recipes

Zara Frost didn’t grow up on the shores of the Mediterranean, but the cuisine stole her heart—and eventually transformed her kitchen.

As a food stylist and busy mother of two, she always searched for meals that were simple, flavorful, and wouldn’t leave her sluggish halfway through the day. It wasn’t until she started merging Mediterranean flavors with a low-carb approach that everything clicked.

“I loved Mediterranean food, but a lot of the traditional dishes came with a heavy side of pasta or bread,” she says. “When I began paying attention to how food affected my energy, I realized I felt better when I kept carbs in check—especially the refined kind.”

So she didn’t abandon the Mediterranean style—she reinvented it.

Her kitchen soon became a playground of grilled fish, marinated olives, roasted vegetables, lemony vinaigrettes, and handfuls of fresh herbs. Zara recalls one particular weeknight dinner that became an instant hit: zucchini noodles tossed with cherry tomatoes, kalamata olives, feta, and grilled shrimp. “It felt indulgent, but there wasn’t a single processed carb on the plate.”

Rather than counting every gram of carbohydrate, Zara focuses on balance. She builds her meals around healthy fats from olive oil and avocado, lean proteins like salmon and chicken, and low-glycemic vegetables like eggplant, peppers, and spinach. “I want my plate to feel colorful and fresh, not restricted,” she explains.

And flavor is everything. Zara leans on Mediterranean staples like garlic, oregano, sun-dried tomatoes, and lemon to elevate even the simplest dishes. “You don’t need a dozen ingredients to make something delicious. You just need a few good ones used well.”

Beyond taste, she found this approach deeply satisfying. “I stopped thinking about food as something to burn off,” she says. “It became about nourishment and enjoyment. I could have dinner and not feel bloated or tired afterwards.”
