Cooking was always more than a chore to Romi Dean; it was a way of expressing herself. However, she was worried that her culinary inventiveness would suffer when she was told to reduce her consumption of saturated fat for health reasons.

Romi started experimenting by switching things around rather than eliminating everything.

She found that Greek yoghurt was a great substitute for sour cream, that blending steamed cauliflower could replicate the smoothness of heavy cream, and that carefully chosen olive oil added richness without the weight of butter.


Each replacement focused more on discovery than sacrifice. “I discovered that cooking healthily didn’t have to be monotonous or uninteresting,” she says. “It simply meant being playful and purposeful.”


What was initially a necessity swiftly evolved into a passion project. Now teaching low-fat cooking classes, Romi shares her inventive substitutions and inspires others to think outside the box.
