When Noa Banks first embraced veganism, dinnertime became her biggest challenge. “I was fine during the day—smoothies, fruit, toast,” she recalls.

She remembers one of her earliest attempts: an overcooked pot of lentils and mushy vegetables. “It was… not good,” she laughs. “I wondered if I had made a mistake.” But instead of giving up, Noa simplified everything.
