Before switching up her diet, Yasmin Starr often found herself dragging through the day. “I thought I was just someone who needed three cups of coffee to function,” she jokes.

As a vegan, Yasmin assumed she was already eating plenty of plant-based nutrients.

“I started waking up feeling rested,” she shares. “My digestion improved, and I didn’t need that mid-afternoon caffeine hit anymore.”
She chuckles, not expecting her children to eat like wellness experts. “I simply want them to grow knowing what food can do for them.”
Yasmin also noticed mental clarity—something she hadn’t even expected. “There’s a calm, sustained energy that comes with eating this way,” she explains.
Now, her routine feels effortless: overnight oats in the morning, hearty veggie stews at lunch, and dinners that blend flavor with function.
“For me, fiber isn’t about being trendy,” Yasmin says. “It’s the foundation of how I show up every day—with energy and presence.”
